Alessia's Simple Omelette

Serves 1

Ingredients:

  • 1 large onion diced fine
  • 2 eggs
  • 1/2 capsicum diced fine
  • 1 spring onion sliced
  • handful of spinach
  • 4 cherry tomatoes cut into quarters
  • 1/2 cup Parmesan cheese
  • 1 teaspoon Vegeta
  • 2 tablespoons of olive oil

Method:

  1. In a bowl, crack in 2 eggs. Add in Vegeta, half of the Parmesan cheese. Whisk until combined and set aside.
  2. In a RACO Minerale frypan, on a medium heat, add olive oil, onion, capsicum, and spring onion. Cook until the onion and capsicum have softened. Once cooked remove from pan and set aside.
  3. In the same frypan, on a medium/low heat. Add in egg mixture, and swirl around the pan so the egg mixture can distribute evenly.
  4. Once the egg mixture starts to cook, add in the filling to half of the omelette. Add in spinach and remaining Parmesan cheese. Add in fresh tomatoes and carefully fold over omelette.
  5. Transfer omelette to a plate and enjoy!

SERVING SUGGESTIONS:
You can add any filling you like to the omelette. Try adding in some mushrooms and some bacon.

HANDY TIPS:
If the inside of your omelette isn't cooking as fast as you like, add a lid on the top of the frypan for a minute or so. This will help trap heat into the pan and cook faster!
