The World's Best Fluffiest Pancakes

Recipe by Molly from @the_kirks_crazy_life

Ingredients:

  • 2 cups plain flour
  • 1 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoon salt
  • 2 eggs (separated)
  • 4 tablespoons (50g) butter
  • 21/2 cups buttermilk

Tip: Make your own buttermilk using milk, lemon juice or vinegar. Combine 2 1/2 tablespoons of lemon juice or white/cider vinegar to milk to make up 2 1/2 cups. Let sit for 10 minutes.

Method:

  1. Combine flour, baking soda, baking powder, salt, sugar and whisk together in a bowl.
  2. Whisk egg whites in a separate bowl until stiff peaks form.
  3. Whisk in a separate bowl; egg yolks, buttermilk, and drizzle in butter until combined.
  4. Pour egg whites into wet mixture and gently fold into mixture
  5. Add wet mixture to dry mixture and fold gently together with a spoon or spatula until still lumpy and just combined (lumps will mean fluffy pancakes)
  6. Heat a RACO Minerale frypan over medium heat and grease with butter or oil. Use a 1/4 measuring cup to add batter to the frying pan.
  7. Cook until bubbles appear on top (about 2 minutes) flip and cook for another 2 minutes, serve with maple syrup or honey and butter or any of your favourite toppings.

For best results, use a RACO frypan.
