Ingredients:
- 1kg Red onions, rough peel removed, halved and/or quartered
- 25g Oregano, leaves only
- 75g Aged balsamic
- 50g EVOO, additional if desired
- Black pepper, ground to taste
- Salt, to taste
Method:
- Preheat fan-forced oven to 200 degrees celsius.
- Toss all ingredients in large baking tray and roast for 20-30 minutes or until caramelised, starting to collapse and onion layers separating.
- Dress with additional fresh vinegar and EVOO if desired
