Summer Overnight Bircher Muesli

  • Prep: 15 minutes (plus soaking overnight)
  • Start this recipe the night before

Ingredients:

  • 250g rolled oats
  • 200ml whole milk
  • 100ml cloudy apple juice
  • 100ml fresh orange juice
  • Juice of 1 lime
  • 60g whole almonds, chopped
  • 50g honey
  • 1/2 teaspoon cinnamon
  • 75g sultanas
  • 2 green apples
  • 125g natural Greek Jalna yoghurt
  • 1 large ripe mango, peeled and sliced
  • 2 passionfruit to serve
  • Or Seasonal fruits of choice (peach, watermelon, banana, berries, fresh apricots)

Method:

  1. The night before, place the oats into a large bowl along with the milk, apple juice, orange juice, lime juice, half the almonds, honey, cinnamon, sultanas and a pinch of salt. Stir together and cover with cling wrap and place in the fridge.
  2. The next morning coarsely grate the apples and mix into the soaked oats along with the yoghurt. Stir well.
  3. Place the muesli into serving bowls and top with sliced mango, passion fruit and remaining almonds. Drizzle with extra honey if desired. Enjoy!

*This Bircher will keep in the fridge for up to 5 days…Enjoy!
