The perfect little snack for your afternoon break. These berry friand muffins are seriously delicious! They are so soft but so dense at the same time. It's literally like a little piece of heaven, every single bite! These are the always a crowd pleaser at every function. The problem is, how do you stop at one?
Ingredients:
- 10 egg whites
- 1 cup plain flour
- 3 cups icing sugar
- 3 cups almond meal
- 400g butter melted
- 1 cup berries (frozen work well)
- Zest of 1 lime
Method:
- Pre heat your oven to 150C-160C degrees fan forced
- In a large mixing bowl, shift flour and icing sugar.
- Add in the zest of 1 lime and the almond meal.
- Gently beat your egg whites with a fork.
- Add the beaten egg whites and butter to the flour mixture and mix until well combined.
- Add in frozen berries, and fold in gently. Try not to break and mix to much as your berries will burst and break.
- Fill your RACO Aerolift 12 Cup Deep Muffin Pan. You want to fill it around three quarters full.
- Bake in the oven for 40 minutes.
- Place on a wire rack to cool. And dust the top with icing sugar.
