Ingredients:
- 4 cups rice bubbles
- 1 cup desiccated coconut
- 100 grams butter
- 200 grams marshmallows
- Food colouring
- Sprinkles
- Monster eyes
Method:
- Melt the butter and marshmallows together on the stove over
medium heat. Use a RACO Contemporary saucepan for best results. - Combine the coconut and rice bubbles in a large bowl.
- Add food colouring to the marshmallow mix to colour.
- Pour the marshmallow mixture into the rice bubbles and mix well.
- Fill a muffin pan with the sticky rice bubble mixture.
- Top with sprinkles and add monster eyes.
- Refrigerate for 3 hours or until solid, then using the edge
of a silicone spatula release them from the muffin pan and serve.
