Ingredients:
- 2 cups plain flour
- 1 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 teaspoon salt
- 2 eggs (separated)
- 4 tablespoons (50g) butter
- 21/2 cups buttermilk
Tip: Make your own buttermilk using milk, lemon juice or vinegar. Combine 2 1/2 tablespoons of lemon juice or white/cider vinegar to milk to make up 2 1/2 cups. Let sit for 10 minutes.
Method:
- Combine flour, baking soda, baking powder, salt, sugar and whisk together in a bowl.
- Whisk egg whites in a separate bowl until stiff peaks form.
- Whisk in a separate bowl; egg yolks, buttermilk, and drizzle in butter until combined.
- Pour egg whites into wet mixture and gently fold into mixture
- Add wet mixture to dry mixture and fold gently together with a spoon or spatula until still lumpy and just combined (lumps will mean fluffy pancakes)
- Heat a RACO Minerale frypan over medium heat and grease with butter or oil. Use a 1/4 measuring cup to add batter to the frying pan.
- Cook until bubbles appear on top (about 2 minutes) flip and cook for another 2 minutes, serve with maple syrup or honey and butter or any of your favourite toppings.
