Ingredients:
Vanilla cake
- 1 and 1/3 cup plain flour (we use gluten free plain flour)
- 1 and 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter
- 1 cup sugar
- 2 eggs
- 2 teaspoon vanilla extract
- 1/2 cup sour cream
Vanilla frosting
- 1 cup unsalted butter
- 3 cups icing sugar
- 2 teaspoons vanilla extract
- 2 tablespoons heavy cream
Method:
- Preheat oven 180°C. Line RACO Aerolift Muffin Pan with cupcake liners or prepare cake pan
- In a large bowl whisk together flour, baking powder and salt. Set aside
- In another bowl beat butter and sugar until light and fluffy. Beat in eggs one at a time. Add vanilla and mix. Add the sour cream and mix until combined.
- Slowly add the flour to the mix and stir until just combined.
- Scoop batter into lined cupcake tray or into prepared cake pan.
- Cook cupcakes for 15 mins or cake will take about 20 - 25 mins.
